Mini Oreo Cheesecakes!
If you love cheesecake and oreos, might as well combine them!
This is a recipe I use for the individual cheesecakes.
to begin, you place oreos in the bottom of a lined cupcake tin. The oreos fit practically perfectly in a standard cupcake pan.
After that, you prepare the cheesecake batter. To do so you beat your softened cream cheese then add sugar, vanilla, eggs, and sour cream. You can chose to crush up oreos and add them to the batter, but I opted out of this step. you then plop a spoonful of batter into the cupcake tin until about 3/4ths of the way full. This is where I crumbled the remaining oreos and placed them right on top.
You bake these for about 25 minutes or until they are golden around the edges. Let them cool completely and serve!
These make for a great potluck dish as they are individually prepared so you don’t have to worry about the untensils and such.
